Summer squash or zucchini -- healthy, mouth-watering foods for summer. And they're open to a wide range of seasonings.
ThirdAger Susan of Spring Creek Farm offers this tantalizing recipe called "Joyce's Summer Squash or Zucchini Quickie."
Cut tender squash in half lengthwise. Place cut side down, and prick with a fork.
Microwave for 1-1/2 to 2 minutes.
Turn over. Slash and top with seasonings (I used chopped spring onions and Season All--Joyce Chen suggested parmesan cheese or chopped herbs. I think a spoon of salsa might be good). Heat in microwave another minute and serve immediately.
